She used a lot of brown rice flour. Be careful, here in Ottawa for some reason, a lot of the stores don't store it properly - it needs to be absolutely fresh or stored in the fridge. There is a lot of rancid brown rice flour out there.

I get a lot of ideas from Ms McKenna's books, although I take issue with her using some ingredients, like spelt, that aren't gluten free.
