Vickery includes recipes for 3 different flour mixes that are used in different recipes, based on the qualities of that mix.

I wish that Phil Vickery would write more books like this! I've checked this one out several times for the great recipes & advice on living gluten free & with diabetes. Several of his recipes are my new go to baked goods, especially the cornmeal cake w/apples (which I also have used w/pears successfully). This is definitely going onto my wish list for my home library!
